I recently met someone from Chile, who told me he loves Uni/Sea Urchin. It's a delicacy and acquired taste. You either love it or hate it kind, if you know what I mean.
He told me that fisherman catches ton of Uni and they crack open, eat them with fresh lemon, which is the best way to eat Uni.
Then, he told me another way to eat Uni - A sandwich.
"Sandwich???" I shouted.
"Yes, Uni sandwich!"
I could not believe my ears, so I Googled it.
Apparently, it's been popular in some of the NYC chefs and restaurants. ("The next it sandwich?")
