Japanese or Korean Sushi Rice?
(photo from cookinkorean.com) Our favorite rice is Organic Sushi Rice by Lundberg Farm, which is short grain rice. We found it to be the best match with the rice vinegar we use (Marukan Organic Rice Vinegar) which happens to be made from the same rice. All the sushi restaurants I've worked in the past, used Japanese short grain rice for their sushi. The important thing to know here is the rice is made in the USA since Japan DOES NOT export rice to any other countries. (note: in 2014, they started to export a limited amount of rice made in Japan.) I've never considered using Korean rice for sushi until I read this article. According to Korea’s Agricultural Development Agency, they've performed evaluation test to determine wheater Japanese or Korean rice is more suitable for sushi. Though it is unclear if the panels were Korean or Japanese (they say Japanese cuisine chefs), it is interesting to note the result, which may surprise you. (continue reading)
